This Recipe's Story

When I was working as a programmer at the University of Michigan Medical Center I had a number of Indian co-worker. At one particular pot luck , a co worker named Kirti brought in the most popular dish of all.
This wonderful rice recipe is hers, I take no credit for any of it.
You will have to visit your local Indian food store to get a lot of these ingredients, especially the curry leaves which are fresh but can be nicely frozen for future use.

An Indian Vegetarian Rice Recipe

Ingredients

  • 1 cup long grain rice uncooked (basmati is best)
    cook in a rice cooker or whichever way you prefer
  • 1 medium sized onion, chopped
  • 1 medium sized tomato ,chopped
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 3-4 curry leaves
  • Salt
  • turmeric
  • Coriander-Cumin powder
  • Red chili powder
  • 1 1/2 tsp lemon juice
  • 1-2 Tbsp oil (vegetable/canola/olive or any)

Preparation

Heat the oil in a pan. Add mustard seeds and cumin seeds.
When they begin to splutter add the curry leaves and
 immediately add onions and tomatoes.
Cook on low flame until onions and tomatoes are well cooked.
Combine salt,tumeric,cumin-coriander powder,
  red chili powder in a small dish until you have 2 tsp total.
You will have to taste until you get a ratio you like.
Add the spice mixture and lemon juice.
Then add cooked rice and mix well.
Turn off stove and garnish with fresh cilantro or parsley
  if you do not like cilantro
